Cucumber Dill Spread

Here is one of my favorite recipes for a cucumber dill spread to make light finger sandwiches.

Ingredients:

  • 8 ounces of softened cream cheese
  • 2 tablespoons of sour cream
  • 2 large cucumbers, can be peeled fully or partially, seeded and grated
  • 2 tablespoons of dillweed (fresh dill that has been chopped up fine is best, but dried works well, too)
  • a dash of pepper

Combine all ingredients in a bowl and mix until it becomes the consistency of a spread. The more cucumber you use the thinner the spread will be due to the liquid in the cucumbers.

This makes enough spread to make 20 full sandwiches, which when cut into quarters makes 80 finger sandwiches. You can easily half this recipe for smaller gatherings of tea sharing friends.
