Carrot and Cream Cheese Spread Finger Sandwiches

We’re having fun sharing some of our favorite recipes for making great finger sandwiches to go with your next tea party. This time it’s Carrot and Cream Cheese Spread. This one is easy and fun to do. We have the kids help us as well, then they enjoy eating it, too.

Being just a bit sneaky as we toss in enough carrots so they get some vegetables with their finger sandwiches. So here’s the recipe:

  • For each guest, count on one slice of bread
  • Combine together equal parts of softened cream cheese and shredded fresh carrots
  • Add in a small amount of either crushed sage or crushed basil
  • Spread a layer of the mixture on one slice of bread
  • Top with a second slice of bread, cut off the crusts and cut in half, then cut each half into 3 thin slices.
  • Set on serving plate.

Simple, huh? I told you this one was easy.

With the kids helping, we used whipped strawberry cream cheese. You don’t necessarily think of strawberries and carrots going well together, but they sure did. We omitted the herbs for the strawberry version. But the kids really enjoyed this treat. It turned out to make a very nice presentation with pink and orange colors.

    I never would have thought of carrot and cream cheese sandwiches but I love cream cheese frosting on my carrot cake so I’d probably love it! Thanks for the recipe. (I love the strawberry variation too!)
